Ingredients:
1 1/2 pounds of baby bella mushrooms
2 tbsp of butter
2 cloves of garlic, minced
1/4 cup of breadcrumbs
salt
pepper
1/4 cup of grated parmesan cheese, plus more for topping
4 oz. cream cheese, softened
2 tbsp. of freshly chopped parsley, plus more for garnish
1 teaspoon of thyme
How to make:
Pre heat your oven to 400 F. Grease a baking sheet with cooking spray. Remove mushroom stems and chop them. Place the mushroom head on the baking sheet. In a pan over a medium heat, melt butter. Add chopped mushrooms and cook for about 5 minutes. Add garlic and cooked for about a minute while constantly stirring. Add breadcrumbs and cooked for about 3 minutes.
Season with salt and pepper. Remove them from pan. In a large bowl mix together mushroom stem mixture, parmesan, cream cheese, parsley, and thyme. Season with salt and pepper.
Fill mushroom heads with stuffing. Grate parmesan on top. Bake until mushrooms are golden brown and soft, about 20-30 minutes depending on your oven. Garnish with parsley and serve.
