Ingredients:
1 pound of ground chicken
1 medium zuchini
2 eggs
3 cloves of garlic
cilantro to taste
salt to taste
pepper to taste
frying oil
homemade breadcrumbs from two slices of toast (I use 647 bread bc its low carbs)
How to make:
Start by shredding your zucchini and adding salt. Leave it in a strainer for the excess liquid to be removed. In the mean time place two pieces of bread in the toaster and then place toasted bread in a ninja bullet and make bread crumbs. Then add all your ingredients in a bowl, except the oil.
Heat up your pan with a fair amount of frying oil, then place a tablespoon full of your mixture on the pan and flatten it. Keep doing this until you have no more room on your pan. Fry until one side is golden brown then flip and do the same. Once each side is golden brown, lower your heat, cover and cook for another 2 minutes. Remove your chicken patties, place them on a piece of paper towel to absorb the excess oil and serve.
