Ingredients:
1 cup dry Chickpeas soaked in water and 1 teaspoon of baking soda overnight
2 cloves garlic or to taste
Juice of 1 lemon or to taste
Extra virgin olive oil
3 tablespoons tahini paste or to your preference
Salt to taste
Freshly grounded pepper to taste
Directions:
Rinse soaked Chickpeas, place In a pot and cover with water. Cook at high heat till boiling. Reduce the heat to medium and cover the pot partially. Cook till tender ( at least 1 hour)
Combine all the ingredients in a food processor and process till very smooth adding water from the cooked Chickpeas when needed.
Garnish with paprika, cumin, sumac, fresh mint, and a drizzle of extra virgin olive oil
Enjoy with your favorite veggies.
