A very healthy and quick summer meal that uses fresh homegrown tomatoes. The goal here is not to overcook the tomatoes so you can enjoy their distinctive and delicious flavor!
Ingredients:
1 pack 14.5 Oz Barilla Protein + thin spaghetti or any pasta of your choice
4 large homegrown tomatoes peeled and diced
4 large cloves of fresh garlic diced small
Extra virgin olive oil as much as needed
A few sprigs of fresh oregano
Fresh basil leaves as much as needed
Salt to taste
Freshly grounded black, white, green, and red pepper
2 tablespoons dry sherry or any wine of your choice
1-2 tablespoons balsamic vinegar
Pecorino cheese
Fresh mozzarella cheese
Directions:
Sautee the garlic in olive oil in a large pan till tender, add the tomatoes, basil, oregano, balsamic vinegar dry sherry, salt, and pepper and cook on low heat for 15 - 20 minutes. Do not overcook the tomatoes. Cook the pasta al dente and add to the pan and and cook for additional 5 minutes on low heat.
Garnish with fresh basil, fresh mozzarella, pecorino cheese and extra virgin olive oil.
