INGREDIENTS:
1kg chicken wings (skin on) and/or drumsticks
Salt and pepper to season
1 1/2tbs baking powder
For the sauce-
1 can Dr Pepper
3tbs bbq sauce
6tbs spicy Texan marinade
2tbs brown sugar
2tsp liquid smoke
2tbs Worcestershire sauce
Knob of butter
1tsp cornflour
Salt and pepper to season
METHOD:
Pat the chicken dry (completely dry if you want crispy wings).
Pre-heat oven to 180c-200c.
Mix the salt and baking powder together and pour into a large ziplock bag.
Place the chicken in the large ziplock bag and give it a good shake.
Place the chicken on a wired rack over a tray in the oven.
Bake for around 45mins (turn them over half way).
In the meantime for the sauce mix all the ingredients together in a saucepan and bring to a boil.
Simmer on low heat for 5mins until it thickens. Remove the chicken from the oven.
Place the chicken in a tray and pour the sauce all over the chicken and return to the oven on grill for 10mins.
Serve immediately.
