Saffron butter seabass and veg

The fish is usually baked in lavash bread parcels but today I’ve omitted the lavash bread and just served up with saffron butter baby potatoes and mixed veg.

INGREDIENTS:
• For the fish- Pinch of saffron
• 2 garlic clove finely chopped
• 1tsp garlic powder
• 1tsp chilli flakes
• 60g melted butter
• 6 Seabass fillets
• 2 spring onions thinly sliced
• Handful of coriander chopped
• Salt and pepper to season

For the potatoes:
• 400g baby potatoes
• 3tbs butter
• Pinch of saffron
• Salt and pepper to season

Other:
Other veg of choice I used courgettes, asparagus, green beans and broccoli seasoned with butter salt and pepper and chilli flakes.





METHOD:
Pre-heat the oven to 200c.

Line a baking tray with foil Wash the potatoes. Pat dry.

Melt the butter for the potatoes and stir in the saffron and seasoning.

Pour over the potatoes and mix well to coat. Place in the oven and bake for 10mins.

In the meantime wash the fish fillets.
Mix together the saffron, garlic, garlic powder, chilli flakes into the butter for the fish.Take out the tray of potatoes.

Season the fillets with salt and pepper and place the fillets on the tray. Brush with the butter mixture.

Place some spring onion and coriander on top of the fillets.

Add any other veg you want. Bake for around 12mins or until fish and veg is cooked.

Serve immediately.

NOTE: You will need to adjust timing of veg according to the veg you use some take longer to cook than others.
