PREP TIME: 5 Minutes

Makes 6 servings

 

INGREDIENT

2 lb boneless skinless chicken thighs

2 cans (14½ oz each) diced tomatoes with green chiles,

undrained

1 can (15 oz) tomato sauce

1 package (1 oz) chili seasoning mix

2 cans (15½ oz each) hominy or posole, drained

Sour cream, if desired

Fresh cilantro, if desired

 

 

METHOD

1 Spray 3½- to 4-quart slow cooker with cooking spray. Place

chicken in cooker. In medium bowl, mix tomatoes, tomato sauce and

chili seasoning; pour over chicken.

 

2 Cover and cook on Low heat setting 7 to 9 hours or until juice of

chicken is clear when center of thickest part is cut (at least 165°F).

 

3 Stir to break up chicken. Stir in hominy. Cover and cook on Low

heat setting 15 minutes until heated through. Top individual servings

with sour cream and cilantro.

Tip: Hominy is also called posole and is

dried white or yellow corn kernels that

have had the hulls removed by soaking.

You can find hominy in the canned

vegetable section of the grocery store.
